I am currently in Canada but my son is in my country of origin finishing his high school degree (in 5 months). Which address should I write for him on the IMM0008 form: ours (my Canadian husband and mine) in Canada, where he would be living once he graduates in a few months; or his current address while he is studying?

It's his permanent residence. If he's never changed his address to his school address and still uses yours, it should be okay to use that as his address.
However, if he lives at school pretty much permanently - i.e. through the summers - you may want to include it.
